The Glenturret Lalique Restaurant - A unique, fine dining experience created by Head Chef Mark Donald and his team, set in the heart of Scotland’s Oldest Working Distillery.

Our Two Michelin Star, The Glenturret Lalique Restaurant, is offering a fantastic opportunity to join our team as an Assistant Sommelier.

Enjoy working in our restaurant, open for lunch, dinner and drinks from Wednesday to Saturday. Our bar lunch offers a relaxed setting, with A La Carte, sharing style menus. In the evening, we serve a multi-course tasting menu in the restaurant. Guests are also welcome for whisky flights or drinks, served in our Lalique bar and lounge.

Our Executive Chef, Mark Donald, cooks both seasonal and contemporary food, alongside his talented kitchen team. Our front of house are a team of passionate, proud and focused individuals, who apply great attention to detail to exceptional quality food and wines.

This role is responsible for greeting and serving customers in a professional, warm and friendly manner. Preparing and serving beverages in line with customer’s requirements by following the restaurant guidelinesLearning the menu and using this knowledge to deliver wine pairings and recommendations. Delivering well informed, knowledgeable, exceptional service. Assisting the Head Sommelier in the stock management.

In the role of Assistant Sommelier, you will be expected to work effectively as part of a team providing support to the Head Sommelier within all aspects of the beverage service in the restaurant.

Key Responsibilities

  • Assist the Head Sommelier in updating the wine list in coordination with the Restaurant Manager
  • Recommend food and wine pairings
  • Deliver whisky flights and tastings
  • Deliver cocktail and bar drinks
  • Advise customers on wines based on their personal tastes and food choices
  • Inform guests about different varieties of wines and prices
  • Ensure wines are served at the right temperature and within the proper glassware
  • Store open bottles properly to maintain their quality
  • Help the Head Sommelier to manage the wine cellar and ensure it is fully stocked
  • Assist with exclusive uses and wine dinners
  • To be aware of and comply with Legal, Government and Company Policies relating to Fire, Hygiene, Health & Safety
  • Comply with licensing laws – undertake Personal Licence training
  • Comprehensively able to process till transactions
  • Placing orders for liquor, beer, wine, and other supplies
  • To ensure a full knowledge and application of weights and measures and liquor trading standards laws
  • To carry out bar opening and closing procedures as per the SOP manual
  • Comply with licensing laws

Essential skills:

  • Proven experience as a Sommelier, or similar role in a high quality, fine dining or Michelin Star Restaurant
  • Ability to create food and wine pairings
  • Strong knowledge of vineyards and wineries
  • Understanding of the winemaking process
  • Good communication skills
  • Excellent Customer Service Skills
  • Great Interpersonal Communication

  • Familiarity With Alcohol Restrictions or Laws
  • Being warm and friendly yet professional
