Dinings SW3 Commis / Junior Sommelier

Dinings SW3 is looking to recruit a commis / junior sommelier to join our team. The successful candidate will have a background of service and hospitality and be looking to transfer into a career within the wine industry. Prior knowledge of wine and/or sake is beneficial to being successful for this role, but is not essential – what we are looking for is someone who is passionate about learning and who wants to become the best sommelier possible! You will be working as a part of a team of 3 sommeliers under the guidance of the Senior Sommelier.

About us:

Dinings SW3 is a 70-seat Japanese Izakaya-style restaurant in the heart of Chelsea that serves Japanese food with a focus on European ingredients and sustainability. We have a high-quality wine list of 200 references, mostly focussing on classic producers from the Old World with gems from the New World, as well as one of the largest sake lists in London, with many options by the glass. The wine list is always being updated, and we are proud to have been runner-up for the best UK wine list at the Star Wine List UK for the past 2 years.

What the role entails:

  • Delivering outstanding service to our guests by recommending and serving wines, sakes and cocktails.
  • Help maintain stock levels, assisting with deliveries.
  • Helping conduct trainings for other members of staff when required.
  • Maintaining a complete and up-to-date beverages list.
  • Ensuring glassware for wine service is maintained to a high standard of cleanliness and hygiene.
  • Taking an interest in the food and service standards; rolling up your sleeves and helping other departments when required.
  • Managing the cellar and wine storages, keeping them tidy, organised and hygienic.
  • Being true to, and embodying, our values as a company.

What we offer you:

  • Competitive rate of pay.
  • Constant development on your wine and sake knowledge through trainings and workshops with industry leading professionals, including 3 Michelin-star sommeliers, wine suppliers and head sake educators in the UK.
  • Opportunities to attend trade tastings and wine lunches with suppliers, helping to develop the list at the restaurant.
  • Ability to purchase wine at cost through the restaurant after the end of your probation period.
  • Two high-quality staff meals per day whilst on shift.
  • Support with professional development including cost of WSET or CMS exams.
  • Working with a friendly and engaged team of professionals who are passionate about hospitality.
  • Opportunities for working and planning special events, such as wine dinners and tasting menus, as well as becoming involved with overseas ventures for the restaurant.
