{"id":3019,"date":"2023-09-19T16:02:24","date_gmt":"2023-09-19T15:02:24","guid":{"rendered":"https:\/\/sommelieredit.com\/?p=3019"},"modified":"2023-11-06T11:01:52","modified_gmt":"2023-11-06T11:01:52","slug":"champagne-food-matching-champions","status":"publish","type":"post","link":"https:\/\/sommelieredit.com\/pl\/champagne-food-matching-champions\/","title":{"rendered":"Champagne matchmaker champions"},"content":{"rendered":"<h2>The culinary world is abuzz with excitement as the <a href=\"https:\/\/gossetmatchmakers.com\/\" target=\"_blank\" rel=\"noopener\">Gosset Matchmakers<\/a> 2023 competition reached its final showdown at Le Cordon Bleu London\u2019s <a href=\"https:\/\/www.cordrestaurant.co.uk\/\" target=\"_blank\" rel=\"noopener\">Cord Restaurant<\/a> on Fleet Street, with chef and sommelier pair, Gail Ge\u2019er Li &amp; Jiachen Lu from <a href=\"https:\/\/diningssw3.co.uk\/\" target=\"_blank\" rel=\"noopener\">Dinings SW3<\/a>, winning the title.<\/h2>\n<p>Competing against other outstanding teams from Killekrankie House Hotel, Perthshire, L\u2019Enclume in Cumbria, Rebel Restaurant in Newcastle, and London-based Fallow &amp; Ham Yard Hotel, the team swayed the judges with a beautiful Turbot and Scallop Puff designed to harmonise with Gosset Grande Ros\u00e9.<\/p>\n<p>The finalists were also tasked with crafting a dish using a box of undisclosed ingredients, featuring Cassava, a root vegetable known for its mild nuttiness and sweetness that can be used in the same way as potato. The teams had only limited time to conceive and execute a dish that would harmonise with Gosset Mill\u00e9sime 2015. The winning team transformed the cassava into noodles with a fresh vegetable salad and champagne broth.<\/p>\n<p style=\"font-weight: 400;\">The judges marvelled at the varitery of dishes presented, with no two teams presented it in the same way. <strong>Killiekrankie<\/strong> served a risotto of cassava and potato, brown butter with lemon and thyme, pickled apple &amp; champagne sabayon with crispy yukka trim. <strong>L\u2019Enclume<\/strong> created cassava fritter with labneh and apple &amp; radish salad picked in Grand Millesime 2015. <strong>Rebel<\/strong> made cassava gnocchi, toasted bread sauce, smoked apple and parsley oil. <strong>Ham Yard Hotel &amp; Fallow<\/strong> offered up boulang\u00e8re of cassava, champagne beurre blanc, rosemary smoked hung yoghurt, champagne pickled apple.<\/p>\n<figure id=\"attachment_3020\" aria-describedby=\"caption-attachment-3020\" style=\"width: 1956px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-3020\" src=\"https:\/\/sommelieredit.com\/wp-content\/uploads\/2023\/09\/IMG_8295.jpg\" alt=\"\" width=\"1956\" height=\"1100\" srcset=\"https:\/\/sommelieredit.com\/wp-content\/uploads\/2023\/09\/IMG_8295.jpg 1956w, https:\/\/sommelieredit.com\/wp-content\/uploads\/2023\/09\/IMG_8295-300x169.jpg 300w, https:\/\/sommelieredit.com\/wp-content\/uploads\/2023\/09\/IMG_8295-1024x576.jpg 1024w, https:\/\/sommelieredit.com\/wp-content\/uploads\/2023\/09\/IMG_8295-768x432.jpg 768w, https:\/\/sommelieredit.com\/wp-content\/uploads\/2023\/09\/IMG_8295-1536x864.jpg 1536w\" sizes=\"auto, (max-width: 1956px) 100vw, 1956px\" \/><figcaption id=\"caption-attachment-3020\" class=\"wp-caption-text\">(L-R) Will Oatley, (Managing Director of Louis Latour Agencies); Luciana Berry, (a Le Cordon Bleu graduate and a winner of Top Chef Brazil winner), Bertrand Verduzier, (Global Business Director at Champagne Gosset); Ian Churchill (writer &amp; restaurant consultant); and, Melody Wong (Director of Wine at The Peninsula London).<\/figcaption><\/figure>\n<h3>Judges&#8217; feedback<\/h3>\n<p>Melody Wong, the Director of Wine at the newly opened <a href=\"https:\/\/www.peninsula.com\/en\/newsroom\/london\" target=\"_blank\" rel=\"noopener\">The Peninsula<\/a> Hotel, London and Chair of the judging panel noted how hard it was to pick a winner as all the finalists showed remarkable culinary skills, inventiveness, and teamwork. She was accompanied by experts in the field including Luciana Berry, (a Le Cordon Bleu graduate and a winner of Top Chef Brazil winner), Ian Churchill (writer &amp; restaurant consultant), Bertrand Verduzier, (Global Business Director at Champagne Gosset) and Will Oatley, (Managing Director of Louis Latour Agencies).<\/p>\n<p>Bertrand Verduzier from Champagne Gosset commented, \u201cGosset Champagnes are exquisite wines, enriched with effervescence, making them ideal partners for great cuisine. All teams showed a great knowledge of this fact, and the winners truly demonstrated impressive thoughtfulness and creativity which elevated both the Champagne and the dish they served.\u201d<\/p>\n<p>Now in its eighth year, Gosset Matchmakers continues to celebrate harmonising fine wines with food along with this collaboration between chefs and sommeliers.<\/p>\n<p>The two winners of Gosset Matchmakers 2023 join the distinguished ranks of the <a href=\"https:\/\/gossetmatchmakers.com\/alumni\/\" target=\"_blank\" rel=\"noopener\">Matchmakers alumni<\/a>.\u00a0 They are also awarded a magnum each of Gosset Champagne and a three-day trip to Gosset\u2019s headquarters in Epernay. The visit will feature a full tour of the cellars and vineyards, as well as an exclusive blending session by Chef de Caves, Odilon de Varine
